  • 4 Eggs
  • 20 g Dark Cocoa Powder
  • 20 g Protein Powder (or flour)
  • 1 tsp Baking powder
  • Sweetener according to your taste

For the roll

  1. Separate egg whites from yolks.
  2. Whisk the egg whites until they form peaks.
  3. Carefully add the yolks, cocoa, protein and baking powder.
  4. Spread on a flat baking tray with baking parchment and bake on 200 Celsius for 8-10 minutes.
  5. While still warm, take the longest edge of the sponge, roll it up and let cool down.

For the filling

  1. Soak one gelatine leaf in 1 tablespoon of water for 10 minutes.
  2. Mix together yoghurt, peanut butter, sweetener and the food colouring.
  3. Melt the gelatine leaf on a low heat or in a microwave (10-15 seconds).
  4. Add melted gelatine to the yoghurt filling and mix well together.
  5. Unfold the Swiss roll, spread over the yoghurt filling, sprinkle with some chocolate chips and roll up again.

For the decoration

  1. Carefully melt the chocolate and spread on top of the Swiss roll.
  2. Decorate with more chocolate chips.
  3. Put into the fridge for few hours to chill. Enjoy!
